All Bran Loaf
This is a favourite fruit loaf; one of those go-to recipes which is quick, easy and delicious, keeps well and is delicious with or without butter.
It's a recipe from the back of the cereal packet which I remember Mum used to make.
I have written about this fruit loaf before on this blog, but when I posted a picture of my latest version on Instagram the other day, it struck a chord with lots of people, some of whom asked for the recipe.
So here it is, with my added optional ingredient - ginger.
In my opinion, practically everything is improved by the addition of ginger!
Makes 1 large loaf :
Choose a medium sized cup as your measure.
1 level cupful all bran cereal
1 level cupful brown sugar
1 level cupful dried fruit
1 cup milk
1 level cupful self-raising flour
1 rounded teaspoon ground ginger
a couple of pieces of stem ginger chopped, plus a spoonful or two of syrup from a jar of stem ginger in syrup.
Put the all bran, sugar, fruit and ground ginger into a mixing bowl.
Add the milk, stir and let it soak for about 30 minutes.
Grease a 2lb loaf tin and pre heat the oven to 175c.
When the 30 minutes are up, add the sifted flour and mix well.
Spoon the mixture into the tin and bake for about 50 minutes until golden and risen.
Allow to cool for a short while, then turn out of the tin, brush with the syrup and top with the chopped ginger.
Best served with a nice cup of tea!

DeleteUPDATE ; made a Bran Loaf yesterday. Instead of ground/stem ginger, I used some "ginger nibs" from the health shop, chopped fine and stirred on. We both agreed it was a splendid addition!
