Strange times...

I started writing this blog post about a week ago and then events overtook us and we find ourselves globally in a situation, the like of which none of us would have imagined a few short weeks ago.
Here, in the uk, we are in total lockdown due to Coronavirus, meaning we can only leave our houses for a very limited number of reasons.
Thankfully, one of these is for exercise and visiting the allotment is included in this.
Even so, mr digandweed and I are holding back on sowing lots of things, in case the situation changes yet again and restrictions are tightened even further.
So, what to write about in these strange and difficult times?
Well, we still need to eat and arguably, feeding our bodies with nourishing food is even more important at the moment.
So here is a recipe, inspired by Anna Jones and her book A Modern Way to Eat, for parsley and almond pesto.

Homemade pesto is, I think, far superior to anything you can buy in the shops and is very easy and versatile; keep the quantities similar and you can substitute almost herb or nut for the parsley and almonds.

The recipe makes one small jar which will keep in the fridge for several days.

Use the pesto as a dressing for salads and roasted veggies, stir it into soups or, as I have done here, stirred through pasta with some roasted tomatoes.
The secret to making a really unctuous sauce ( which you possibly already know) is to keep back a couple of tablespoons of the pasta cooking liquid and stir that in with the sauce/pesto.
The starch in the water helps the sauce to coat the pasta making it silky smooth.

Hoping everyone keeps safe and well.

  1. That sounds delicious Annie. I was meant to be taking over half a friend’s allotment but now she’s not at work and her husband is also around to help she’s decided she can manage the whole plot after all. I was disappointed at first but it’s probably for the best for now.

    1. Thank you Gina. That's disappointing about the allotment, but, yes, given the present circumstances probably for the best.

  3. I love Anna Jones' recipes and am currently working through the ones in A Modern Way To Cook. When I'm not doing that I'm working my way through a mountain of Fry's Chocolate Cream bars. Do you reckon that's a balanced diet?
