Happy Easter




Some tulips and a Simnel cake to celebrate the Easter weekend.

This recipe from the Waitrose website for an apple and ginger Simnel cake is now my go-to recipe at Easter.  I tweaked it slightly by using 100g crystallised ginger and 100g sultanas. It makes a deliciously different cake.

Though there are still restrictions in place in the UK due to Covid, we can meet a small group of people outside, so Easter egg hunts can go ahead!

    Your Simnel cake looks so pretty with the grape hyacinth & viola decoration. Happy Easter (despite the restrictions).

      Thank you Natalie - I'm glad you like it. It was all demolished over the space of a couple of days of family garden picnics.
