Courgette cake with pecans and lime frosting

It all begins innocuously enough. 

Three small courgette plants, set out neatly in a row on the allotment: two green and one yellow variety.

But as veggie growers, we know where it will lead; sooner or later, to the dreaded courgette glut!

I'm looking ahead and getting prepared with this delicious courgette cake.

Think carrot cake, but with courgettes instead of carrots.

It's a recipe adapted from one I found on the BBC Good Food website.

Definitely a cake I will be making again.
