Here and there

Mr digandweed and I have been away. We travelled west to the cities of Bristol and Bath, cities I know well from my childhood and teenage years.
Bristol is a bustling, cosmopolitan, energetic city; Bath, an elegant, stylish spa, famous for its Roman baths and beautiful architecture.

We spent last Saturday in Bath and were blessed with the most beautiful late summer weather for a walk along the Kennet and Avon canal and River Avon.

We even spotted some characters who looked like they had escaped from a Jane Austen novel.

Back home in the Fens and shopping for a few groceries in our little town, I found these beautiful, English grown aubergines in our local greengrocer's and had to buy some.

Deciding what to do with them, I came across a Jamie Oliver recipe for aubergine lasagne.  I adapted the recipe slightly, using 2x125g packets of mozzarella in place of the cheddar cheese.

It was a quick, easy and delicious recipe, especially with some toasted sourdough and salad on the side.

A week on from our long weekend away and the weather is beautifully sunny again today in our corner of the fens.
Hoping it is the same with you!

Happy weekend!

p.s. I have a new Fenland lottie Facebook page and have installed a clever linky button thing at the top of my blog sidebar. (It's amazing what can be achieved by following 'how to' videos on You Tube!)
It would be great if you could nip over there and give me a like x

  2. I was in Bath last Saturday as well! On Pulteney Bridge as it happens. We probably passed each other. Glad you had a good time, it's a beautiful place isn't it. The aubergine lasagne looks delish, and how fantastic to find English aubergines to use. I hope you enjoy the rest of the weekend. CJ xx

    1. Gosh How weird! We may very well have passed each other. We were there with my sister and brother in law and their little King Charles Spaniel dog. We had a drink in the cafe just down the steps and then looked in some of the shops on Pulteney Bridge.

  3. Have never visited Bristol or Bath but they are on the list. The mister here would love that lasagne. Is that home baked sourdough?

    1. Bristol and Bath are both very interesting places and Bath, especially, is beautiful. Yes home made sourdough. I've really got into baking it since I did the course.
