Happy Easter


I tried a new recipe for this year's Simnel cake.
Following on from the ginger theme in my last post, I found this recipe on the Waitrose website and just had to try it out!

I tweaked the recipe slightly and used half crystallised ginger and half sultanas.
The mixture was very moist and took longer to cook than the recipe indicated, but I'm hoping it tastes good.

  2. I made a (vegan) Simnel cake yesterday. Just the Christmas cake recipe with marzipan in the middle. Have a lovely time with your family (and eating all the chocolate!). Happy Easter.
